Our Royal Wedding

This is the story of a handsome young man from Rhode Island and a beautiful young woman from Michigan who were both living in Los Angeles, CA.  He took her for a motorcycle ride to the town of Los Olivos, CA where, unknown to them, they were destined to be married.  They started dating and spent a lot of time together as they were working for the same editing house, at that time.  The young man worked his way up the ladder and out to partner with his co-worker and best friend and they started their own editing house.  In the meantime, he had purchased a house and she eventually moved in with him.  They were very compatible and lived together for a few years.  Eventually, they decided to enter into marriage.  Mr. & Mrs. Joseph C. The Wedding was a very beautiful and
 creative event, held on August 6, 2011, at the Figueroa Mountain Farmhouse in Los Olivos, CA. It was at the top of the mountain and the view was spectacular!  The bride was stunningly beautiful and the groom was very dapper.  The Ceremony was touching and emotional as the sun setting in the mountains shadowed a beautiful silhouette of two tender hearts vowing to love one another forever. The celebration that followed was an evening under stars that seemed so close and touchable with music flowing from a melodious orchestra and singer's creative renditions of love songs, a delicious dinner and wonderful wines from the surrounding wine farms. It was a celebration that will always remain in the memories of the guests. 





     

One of the most beautiful love stories ever told.  May God Bless them and bring them continued good health, immeasurable happiness, joy of family, and everlasting love.

Peace be with You and Happy Easter!

Hello again,

I cannot believe it has been a whole year since I have entered a post. My life as a caregiver to my 95 year old mom has totally absorbed my life. I have been cooking fresh everyday and I will definitely share some of my cooking experiences with you.

In the meantime, I am wishing you a Pleasant and Peaceful Easter. May God's Blessings be with all of you.

Micro Egg Omelet Sandwich

Micro Egg Omelet Sandwich

There is nothing like a fluffy egg omelet sandwich to start your day. It is healthy and easy to make. I make this sandwich for my Mom and I almost every morning and it takes the edge off our hunger in a most delicious way.

This is a wonderful snack to take with for the morning commute or if you are flying. It only takes minutes to make and is very satisfying. It will ward off temptation to eat other less healthy snacks. You will have a new outlook on the day.



2 tablespoons Olive Oil
3 eggs
½ cup grated Pecorino Romano Cheese
1 tablespoon shaved butter
2 Slices Whole Grain Bread

Pour Olive Oil into bottom of pasta/soup dish
Roll dish to coat sides
Break 3 eggs in dish and scramble
Add cheese and fold into eggs
Add Shaved butter
Cover with flat dish
Microwave for 2 ½ minutes
Place bread on flat dish
Microwave for ½ minute
Fold egg omelet in half and place into bread slices

The Italian Breakfast Scramble, Frittata, Quiche

It is always a comforting feeling when there is a delicious breakfast on the Italian Kitchen Table. You wake up to the wonderful aroma that permeates the air and stimulates your taste buds and your desire to enjoy life. Included in the breakfast are healthy and stimulating ingredients. In this particular breakfast we have zucchini, eggs, onion, tomatoes, and roasted chicken. What a delicious combination of healthy foods.

3 small zucchini
1 med onion
1 med tomato diced
3 eggs scrambled
3 tablespoons olive oil
1 roasted chicken breast cut into small pieces.
Salt and pepper and seasoning to taste.

Wash and slice zucchini into thin rounds.
Peel and slice onion into thin rounds.
Wash and dice tomato.
Open and scramble eggs.

In lg sauté pan, on medium high heat, start to sauté zucchini in olive oil, until starting to brown and turn.
Add thinly sliced onion and allow to soften with heat and then fold into zucchini.
Sauté for a short while until tender and add diced tomato, folding into the mix.
Push sautéed veggies to the side of the pan and add the scrambled eggs to the center.
Allow to run through the veggies and as it cooks, scramble into the veggies.
Again, push contents of pan to the sides and add the roasted chicken.
Continue to cook until chicken is heated, and serve.

Frittata: Fold chicken into veggies, spread evenly in sauté pan, pour 4/5 scrambled eggs over chicken and veggies and heat until firm.

Quiche: Fold chicken into veggies, pour 5/6 scrambled eggs into veggies and pour into a 9" pie shell baking at 350 degrees for 20/25 mins until firm.

Baked Stuffed Pasta Shells

12 oz pkg of Jumbo Shells Pasta

Cook shells in boiling water and a little salt until tender but not fully cooked.

1 small onion chopped
1 clove of garlic smashed and shopped
2 eggs slightly beaten
8 oz of Ricotta Cheese
½ cup Italian flavored breadcrumbs
1 tblsp parsley flakes
½ cup grated Pecorino Romano Cheese
(optional: 2 cups finely chopped cooked chicken or turkey)

2 cups shredded Mozzarella Cheese

In la large bowl, combine:
onion, garlic, eggs, ricotta, breadcrumbs, parsley flakes, pecorino cheese.
(You may also add chicken or turkey at this time, also)
Fill Shells with mixture.

Spread tomato sauce on bottom of 9 x 13 baking dish with cover .
Arrange shells on sauce, then cover shells with tomato sauce.
Bake in 350 degree oven for 40 minutes.
Uncover, spoon more sauce over shells.
Top with Mozzarella Cheese and bake another 10 minutes.
